Chocolate and Cashew Mousse

2.5 cup milk
1/2 tin of condensed milk
3 Tbspoon of chocolate  flavored custard powder
 1 cup cream
1 cup broken cashew pieces or fresh fruits.
1 tsp of vanilla essence
100 mil of fresh cream. OPTIONAL
Keep half cup of milk aside and mix in the rest of the milk and
the condensed milk in a thick bottomed pan.
Heat half cup milk lightly and mix in the flavoured custard
powder into this. Mix well so that no lumps remain.
Mix the custard mixture into the milk and condensed milk and
place the pan on a low heat. With a wooden spoon continue to mix
the mixture so that it does not stick to the bottom of the pan.
Heat the mixture, stirring continuously till the mixture begins
to thicken. Remove from fire and allow this mixture to cool
completely to room temperature.

Beat the cream and add to the prepared milk and custard mixture.
Add the essence and mix. With a hand blender, blends the mixture
well and place in a freezer container with a lid. If you don't
have an aluminum ice cream container then use any bowl and cover
with cling wrap or foil. Allow mixture to set in the freezer and
this should take around 2-3 hours. Once set, re whip the gelato
with a hand blender or put it back into the mixer to give it a
good whip so that it is light and fluffy.

At this stage mix in the fresh or dried fruits that YOU ARE USING
OT NUTS. place GELATO BACK INTO THE Container and allow it to
reset for another 2-3 hours.

Serve chilled as it is or with a generous helping of dried fruits
or biscuit wafers.
